~:Nutty Yogurt Bread Recipe:~

350° oven
Bake for 1 hour
Yields 1 loaf

Ingredients:

1 T sunflower oil, play extra to grease pan
2 1/4 C unbleached flour
1/4 C plus 2 T whole-wheat flour
1 t salt
1 t cream of tartar
1 t baking soda
1/4 C mixed nuts, chopped
3/4 C sunflower seeds
1 t honey
3/4 C, plus 2 T plain yogurt
1/14 C milk
2 T sunflower seeds, to sprinkle

1. Grease a 9 x 5 x 3 inch loaf pan with oil. Sift the flours, salt, cream of tartar, baking soda, and baking powder together in a large bowl. Stir in the nuts and sunflower seeds.

2. Mix the honey, yogurt, milk and oil. Stir into the dry ingredients and mix to form a soft dough.

3. Spoon the batter into the prepared pan and smooth to level the top. Sprinkle with sunflower seeds. Bake in the preheated oven for 1 hour, until golden and risen. The bread is ready when its edges shrink from the sides of the pan.

Thanks for posting the recipe -- it sounds delicious! My parents are coming for a visit this weekend, and maybe I'll give it a shot. Mom would be so impressed...

BTW - How is the Ultimate Bread book? Worth picking up?

That Ultimate Bread book is FANTASTIC. I've used so many recipes in there - and they do a really good job of explaining the chemistry of bread making, etc. - so everything you're doing begins to make sense. I also like how they group the breads and describe the history behind the loaf, the area it's from, the cultural celebrations and traditions it's associated with. My favorite is the Ciabatta.
